Ingredients
Apricot Chutney
3/4 cup apricot preserves
4 dried apricots, cut into small dice with scissors
1 fresh apricot, peeled, chopped
4 Tablespoons apple cider vinegar
1 Tablespoon golden raisins
1 green onion stalk, finely sliced
2 teaspoons fresh ginger, peeled and grated (about 3/4 inch knob)
1/2 jalapeno, seeded, minced
1/2 teaspoon curry powder
Lamb Burgers
1lb ground lamb
Za’atar spice*
4 slices Gruyere cheese
Arugula or other bitter greens
Pita bread
Apricot chutney
Instructions
Apricot Chutney
Makes one cup
- Place all ingredients in a small saucepan.
- Bring to a slow boil and reduce to a simmer.
- Cook for 20 minutes until thickened. Store in the refrigerator.
Lamb Burgers
- Pat out four burgers and season with Za’atar spice.
- Cook to the desired doneness and melt a slice of cheese on each.
- Serve with pita or over greens. Top with chutney.

*It’s no surprise that so many cooks are obsessed with Za’atar seasoning, a Middle Eastern spice blend that goes with just about everything. Traditionally, home cooks have personal recipes of herbs, spices, and seeds perfected over generations. With increased demand, it is easily available in store-bought brands that combine thyme, oregano, and marjoram with salt, dried citrus peel, sesame, sumac, cumin, or coriander.
